In France, the composition of a cuvée is known as an assemblage. This refers to either the joint pressing or fermentation of different grape varieties in a fermentation tank to produce wine, or the subsequent combination of wine batches from different grape varieties or vineyards.

The resulting wine is also known as a cuvée. Specially selected wines are combined to create the perfect cuvée.
